Considering their youth, Chef/owners Kevin and Kori Kathman have extensive culinary pedigrees. They have developed their skills in venues such as The French Laundry, Pinot Blanc, Christopher’s, Tarbell’s, All Seasons Bistro, and Cuvee Beach in the U.S., as well as La Fleur de Sel, Venlo, Astrance, Arpege, and Gordon Ramsay in Europe. The couple’s classical training combines with contemporary flavors and new world ingredients to produce a New American cuisine which is inspired and unique.

The menu at BLEND showcases the best available seasonal ingredients. Kevin works very closely with all of our suppliers to ensure that the correct quality is what is delivered each day. BLEND will soon be growing most of its own organic/biodynamic produce in order to have even more control of flavor and selection. Kori designs and produces all of the pastry and desserts, gaining immediate acclaim and recognition in a demanding market. Her “Best Ever” dressing makes our heirloom tomatoes and hand pulled mozzarella sing with fresh flavor. Kori is also your host in our dining room during service.

The wine list at BLEND is thoughtfully paired to the flavors of the food. Wine Director Bret Fenton spent two years working with Kevin in the Napa Valley and the two simply picked up where they had left off after All Seasons Bistro in Calistoga. Wine is certainly as important as food at BLEND, and the list is a reflection of the passion present in the food. Kevin and Bret work closely together to create a Chef’s Tasting Menu with wine pairings that is unrivaled in the Desert; often the Tasting Menu features wines not available anywhere else.
